Pour the lukewarm water into a large mixing bowl and mix in the yeast.

Add the flour, salt, sugar and softened butter or margarine. Mix until the dough has an even consistency

Knead for 5 minutes.

Cover and leave to rest for 45 minutes

Flatten into a rectangle, 40cm wide and 20cm long. Cut into 10cm squares. Brush a 1cm border of beaten egg onto each square. Put around 12g date paste on half of the square, then an apricot on top. Fold over the other half and press the edges together

Cover and leave to rise for 45 minutes

Brush with beaten egg. Bake in the oven preheated to 220°C for 12 minutes
